They're gorgeous, and in searching for info about them I keep seeing that they are peaceful and pretty much must have live food. I've heard that they can be hard to keep. I'd really like to hear from those of you who know something about them from personal experience.

Jemy who use to come on our site a lot about a year ago he breeds Discus so he could probably give you a ton of information. Might try to send him a PM and tell him you started a thread on TRAC looking to gather information about discus.

I've heard they can be "difficult" fish to keep, but didn't find anything in my online search that told me how they are supposed to be difficult, other than that they need live food.
Are they sensitive to fluctuations in ph or temperature or things like that? Are they solitary or do they do well with others of their own species? How much room is minimum for keeping them healthy and happy?
I'm sure I'll have more questions, but those are my starters.

I have been study Discus for many years. There is too much information out there on Internet; in fact some may confuse you. After many years experience my conclusion is I was misled by some of those information and wasted a lot of time and money. The truth is that discus is not difficult to keep as long as you on the right track. And they don’t require expensive equipments. Just for the purpose to show how simple it could be. To keep a pair discus health I just need a 20G tank, heater and an air pump sponge filter and they can eat all kinds of normal food. But don’t take my word as discus is easy to keep for everyone. But you can have a good start from the 2 important things: Temperature around 83F “Matured Nitrifying Bacteria” air sponge filter.

Give us some ideas about what you mean by "normal food". I wouldn't think they would like a cheeseburger and fries

How about a fish sandwich?
Discus are not difficult as Jemy said, Keep the temp. 80-84ish, feed them, and keep them clean. IMO and experiences, nothing more than normal fish care is required. People try to make the water "perfect" for discus and cause WAY more problems than they ever would've fixed in doing so.
